Firstly, happy National Burrito Day. This post has nothing to do with burritos, but it’s important that everyone knows.
Moving on.

Where do I bEGGin? The restaurant itself: Omelette Express strays away from the typical ‘50s diner theme yet maintains a nostalgic feel. The front ends of old classic cars mounted on the walls, mismatching tables and chairs, and energetic environment gives the restaurant a unique, homey, lived-in-but-in-a-good-way vibe. Not only is the restaurant welcoming and spirited, but the staff is superb as well. Here’s the true test: they don’t even seem to hate my friends and I when we annoyingly ask to split the bill five ways. Well… At least they don’t show that they do.
I visited this afternoon for lunch and was feeling WILD, so I ordered something other than an omelet. Where is my gold star for trying something new? ☆ I got the Vegan Mix which consists of potatoes, mushrooms, spinach, onion and avocado with a side of fruit. I like that Omelette Express doesn’t use tofu in this scramble because that’s one of the things I hate most about ordering vegan dishes at breakfast restaurants. I'm not the biggest tofu-lover. Here’s a secret: I’m 99% percent vegan (sometimes I eat eggs, only from Omelette Express really) but I don’t like to tell people because I DON’T WANT TO GET BULLIED. Stay in your lane, everyone. There you go, Talu (I hope you see this)—I finally said it and your wish has been granted. My secret is out.

Kiana, who has been a vegetarian for as long as I’ve known her, has recently switched to veganism and told me, “Omelette Express was a place that made me really think about if veganism was for me because the omelets are seriously that good”. She and her mom, Tiffany, are the biggest Omelette Express fiends I know! “It has been my favorite breakfast restaurant since forever." Forever is a long time."I used to go as a kid all the time and get the spinach mushroom omelet and just recently began having it on my ‘must-visit’ list for when I’m in town. Don’t even get me started on the salsa…” If no one was looking, Kiana would probably drink it. Bottoms up!
Tiffany weighed in: “It’s the most flavorful, delicious omelet in Sonoma County—only omelet I’ll eat!” Eggactly, Tiff Tiff!
Bring your appetite—it’s best if it’s as big as that of a 15 year old boy—because the personalized omelets are massive. More often than not I’ve taken my leftovers home with me and enjoyed them as breakfast the next day. Reheating eggs from the day before=disgusting concept but surprisingly delicious.

I’ve never had to wait more than fifteen minutes for a table. Once I showed up with four others on a packed Sunday morning which would have been a huge, hangry-inducing problem anywhere else, but we were in our seats five minutes later after being lucky enough to talk with the personable owner (Don Taylor, I presume, based on the restaurant sign) while waiting outside. I’m always amazed at how quickly they turn tables considering that during any given shift, I’ve been able to count maybe five waiters/waitresses. Even when the restaurant is ~poppin’~ (aka every single time I’ve gone), orders up in under ten minutes or less. The only possible explanation: witchcraft.
